The grilled tuna can be served with grilled fruit for a complete meal.Ingredients:4 4- to 6-ounce fresh or frozen tuna, marlin, or swordfish steaks (about 1 inch thick), thawed if frozen4 slices bacon1 recipe Tropical Glaze (see recipe below)4 1/2-inch slices fresh pineapple, or 4 slices canned, drained pineapple1 small papaya (ripe but firm), peeled, seeded, and quarteredLime wedges and thin slices of lemon, orange, and grapefruit peel (optional) Share Directions:Rinse fish; pat dry. Cook bacon in a large skillet 2 to 3 minutes until partially cooked but not crisp. Wrap a piece of bacon around outside of each fish steak and secure with a toothpick.Prepare a grill with a cover for indirect grilling: Arrange preheated coals around a drip pan. Or preheat gas grill, then turn one side off and set drip pan over burners on that side. Test grill for medium heat above pan.Place fish on lightly oiled grill rack over drip pan.
